For seating, a countertop should overhang the cabinet or island panel by 25cm to 30cm. That gives knees somewhere to go and lets you sit square to the surface rather than side on. Always ask your fabricator for the specific figure for your material and thickness. A stone worktop is not a surface you want to test by leaning on it.
Where the projection exceeds the material limit, there are several approaches that keep knee room clear. Steel flat bar or plate set into the cabinet run and hidden inside the substrate is the most discreet, as nothing is visible beneath the surface. Visible corbels and posts are traditional but they occupy exactly the space you were creating for legs, so plan their positions between seats rather than in front of them. Panelled legs at the outer ends of a run are less intrusive than a series of brackets along it.
A waterfall end or a full return panel adds rigidity to the whole structure, which sometimes allows a slightly deeper seated overhang along the front edge.
Comfortable seating comes from three dimensions working together: the worktop height, the seat height and the overhang depth. Get the first two right and you have somewhere to sit; get the third right and you have somewhere to sit properly.

The thickness of the surface eats into knee room. A 60mm stone edge sits 6cm lower than the top face, and that is 6cm removed from your available clearance. A thick or heavily profiled edge looks substantial but takes space from the person sitting under it, so factor the edge depth into your calculations rather than measuring from the top surface alone.
Soften the front edge if the seating is used daily. A small pencil round or bevel is kinder to forearms than a sharp square arris, especially on stone. A square edge on timber can be eased slightly with fine abrasive paper without changing the look.
Overhang is one part of a wider layout. Allow around 60cm of surface width per person along the front edge, keep 15cm to 20cm between stool frames, and leave at least 90cm of clear walkway behind the seats so people can pass while someone is seated. If the walkway is also the route to an oven or dishwasher, aim for 1m or more.
Think about what sits beneath the surface as well. Sockets, integrated bins, appliance fronts and radiators all steal knee space regardless of how far the top projects. Position seating along the section of the island where the cabinets back onto the working side, leaving the seated side clear.

Cut a sheet of plywood or stiff card to the overhang depth you are considering and clamp it temporarily to an existing surface at the right height. Sit at it on a stool of the intended seat height and eat a meal there. Ten minutes of that test tells you more than any measurement, and it is far cheaper than adjusting a fitted worktop afterwards.
